| INGREDIENTS |
RICE (NASI):
Long Grain Raw Rice - 2 cups
Coconut milk - 1 cup
Water - 1 cup
Screwpine / pandan leaves - 3/4 (slightly crushed and knotted)
Salt - to taste
Accompaniments:
1. Sambal
6-8 fresh red chillies
2 large onions
4 cloves of garlic
1/4" OF GINGER
- BLEND THE ABOVE FOUR INGREDIENTS
2 RIPE TOMATOES
Anchovies (may be substituted with small dried prawns) - 2 cups - deep fried
Tamarind juice - accordingly
Salt
2. HARD BOLIED EGGS - quartered
3. CUCUMBER SLICES
4. LONG BEANS 3/4-COOKED, MIDLY FLAVOURED WITH TUMERIC AND SALT
5. FRIED GROUND NUTS
OPTIONAL:
FRIED CHICKEN | METHOD | RICE
ADD RICE, MILK, WATER, PANDAN LEAVES, SALT AND COOK AS PER YR NORM. RICE SHOULD NOT OVERCOOK, SHOULD BE FLUFFY.
ACCOMPANIMENTS:
1. FRY THE BLENDED INGREDIENTS IN OIL TILL THE OIL BREAKS.
2. ADD TOMATOES
3. ADD THE ANCHOVIES (1 CUP - CHUSH WITH YR HANDS)
4. ADD TAMARIND JUICE AND SALT.
YOU MAY ADD A LITTLE SUGAR IF YOU LIKE.
TO SERVE:
SERVE RICE ALONG WITH THE SAMBAL, EGGS, CHICKEN, NUTS AND CUCUMBER AND BEANS. EXCELLENT FOR PICNICS. TYPICAL MALAY BREAKFAST. |
