| INGREDIENTS | Brinjal (cut into pieces) 1cup
Cooked rice
Onion – 1
Tamarind - marble size
Chillie powder - 1 tsp
Turmeric - 1/2 tsp
Coriender powder - 1 tsp
Ginger - garlic paste - 1 tsp
Salt
Oil
Jeera - 1 tsp
Mustard seeds - 1 tsp
Kadipatta
To be roasted and powdered
Sesame seeds - 1 or 2 tbsp
Cloves - 2 to 3
Cinnamon stick - 1
Elaichi - 2 to 3 | METHOD | 1. Keep the roasted powder ready.
2. In a kadai pour oil, after oil is heated put mustard seeds, jeera, kadipatta after it splutters add onions and fry well add ginger - garlic paste fry for some more time then add haldi, chilli, coriander powders.
3. Add brinjal fry for 2min, then add extract of tamarind juice and salt cook till brinjal is cooked then add the roasted powder cook for 1 or 2 min and the brinjal masala is ready.
4. This brinjal gravy you can store in fridge and when needed mix with hot cooked rice and serve. |
