CHETTINAD CHICKEN Recipe | Main Course Recipe by ArunaAshokkumar |
| INGREDIENTS | Chicken - 1 kg
Curd / yoghurt - 1 cup
Turmeric - 1 tbsp
Salt - to taste
Oil - 5 tbsp
Onion - 1
Lemon - 1 or lemon juice -1 tbsp
Cardamon - 5
Cinnamon - 1 small piece
Cloves - 5
Chilli - 7
Garlic - 1
Ginger - 1 tsp
Pepper [black] - 8
Fenu Greek - 1 tsp
Poppyseed - 1 tsp | METHOD | 1. Clean the chicken and cut it into big pieces. Then add salt, turmeric powder and marinate (soak) in curd and leave it for an hour.
2. In a dry pan, fry ingredients Cinnamon, Cloves, Chilli, Garlic, Ginger, Pepper, Fenu Greek and Poppyseed.
3. After frying, grind in a mixie (using water, optional) and keep aside.
4. Now in a pan heat the oil, fry the chopped onions and
add the grinded mixture. Fry for a few minutes.
5. Now add the marinated chicken and cook well. Once the chicken is cooked, add lemon juice. Allow the water to evaporate by keeping a low flame.
6. The saturated fat of the chicken will float like oil on top. Goes well with plain rice. |
