SPICY TOMATO SOUP Recipe | Starters and Snacks Recipe by bhuvana logesh |
| INGREDIENTS | 15g ghee
2 oinions, finely chopped
1 tsp yellow mustard seeds, few dried curry leaves
1 tsp chillie powder
2 cloves garlic, crushed
¼ cup tomato paste
1 tbsp sugar
2 tbsp plain flour
2 cups vegetable stock
400g can tomatoes
1kg tomatoes, peeled, chopped. | METHOD | 1. Heat ghee in pan, add onions, cook onions until brown.
2. Add mustard seeds, curry leaves and chillie powder, cook 1 min while stirring.
3. Add garlic, tomato paste, sugar and flour, cook 1 min while stirring, gradually stir in stock, crushed, undrained canned tomatoes, and fresh tomatoes, bring to boil, cover, reduce heat, simmer 1 hour, stirring occasionally.
4. Serve soup with about a tbsp of cream in each bowl if desired. |
