| INGREDIENTS | CARAMEL
3tbs sugar
3tbs coldwater.
CUSTARD
4 or 5 eggs
¾ pint milk
1ts sugar vanilla flavouring A pinch of salt | METHOD | 1. Put the sugar and water into a saucepan and boil quickly, without stirring, until it assumes a pale coffee colour, then stir it well.
2. Warm a plain mould, pour in the caramel and keep turning it round and round until the interior is completely coated with the caramel which will become hard almost immediately.
3. Now make a custard. Beat the egges and to them add the sugar, flavouring and salt.
4. Heat the milk and pour it slowely over the egg mixture, stirring all the times.
5. Then pour the custard very carefully into the prepared mould, cover with buttered paper and stream very gently fo 40 min, when it should set.
6. Let it stand a few min before turning it out. The caramel wii form a sauce round and over the pudding.
7. It can be saved hot or cold. |
