STUFFED BITTER GUARD Recipe | Main Course Recipe by Mrs Minal Prakash |
| INGREDIENTS | 4 fresh long BitterGuards
2 big onion
1 small dry coconut (if not dry then take fresh)
1/2 inch ginger
peanut powder
coriander
chilli powder
garam masala
cumin seed powder
tamrind
jaggery
salt
for seasoning
oil, mustard seed, cumin seed, turmeric powder, asafoetida, curry leaves
| METHOD | 1. Cut each bitter guard into 3,4 pieces and remove it's seed by using spoon or small knife.
Cut each piece into 4 halfway parts. Take care that each small piece should not be cut into 4 pieces. Put these pieces in salted water.
2. Soak tamrind in a cup of water, add finely cut jaggry into it.
3. Take finely chopped onion. Add finely chopped coconut, peanut powder, ginger paste, chilli powder, garam masala, salt, cumin seed powder , a pinch of asafoetida and turmeric powder and finely cut coriander into it to make a stuffing material.
4. Now stuff bitter guard pieces with the mixture made in step 3. leave excessive mixture as it is.
5. Put about 4 spoons of oil into thick copper bottom vessel.
When oil becomes hot add mustard seeds, cumin seeds, asafoetida, turmeric powder, curry leaves.
6. Now put stuffed bitter guard pieces into it and add excessive mixture into it. Now fry till it becomes golden brown.
7. Now add tamrind jaggery water into it and stir finely. Put a cover on vessel and leave it on medium flame for 10 minutes .
Note:
Don't use plain wanter into it, tamrind jaggery water should be enough to boil bitterguard. |
