VIRGINIA BAKING POWDER BISCUITS Recipe | Starters and Snacks Recipe by Kevin Tighe |
| INGREDIENTS | 2 tsp butter (softened) & 8 tbsp butter cut into 'inch cubes
2 cups all purpose flour
2 tsp double acting baking powder
1 tsp salt
2/3 cup milk | METHOD | 1. Preheat oven to 400F, 200C. Spread 2 tsp of butter on a baking sheet. Combine dry ingredients and sift them into a deep bowl.
2. Add 8 tbsp butter cubes and rub together with fingers until they make a coarse meal. Pour in all the milk at once and mix briefly with a wooden spoon.
3. Stir just until a smooth soft dough appears. Do not overbeat. Place on a lightly floured surface and roll out to abt 'inch thick.
4. With a biscuit cutter or rim of a glass, cut into 2.5 inch rounds. Gather the scraps and roll out again and make more biscuits.
5. Arrange side by side on the buttered baking sheet. Bake in the middle of the oven for about 20 minutes, or until they are a delicate golden brown. Serve and eat at once. |
