STUFFED CAPSICUM Recipe | Main Course Recipe by shilpaaravind |
| INGREDIENTS | Capsicum :4 (medium sized)
Potato (Boiled): 3
Boiled peas, carrot, beans: 1 cup
Onion:2 (medium sized)
Tomato:1 big
Tomato: 2
Lemon juice: 1 tsp
For grinding:
Garam masala: 2 tsp
Green chilli: 4
Red chilli pwd: 1 tsp
Termeric: a pinch
Corainder Pwd: 1tsp
Cashew: 5-6 kernels
Poppy seeds: 1tsp
Salt: to taste
For garnishing:
Corainder leaves & grated coconut
| METHOD | 1. Hollow the capsicum and empty the seeds in it, make it into a cup.
2. Mash all the above vegetables and add little garam masala , r. chilli pwd, salt and mix well.
3. Stuff the mashed vegetables inside the capsicum.
4. Splutter little mustard and jeera seeds with oil in pan and roast the stuffed capsicum (uniformly all sides) and keep aside.
5. Grind all the above ingredients and make it into a paste.
6. In a pan add little oil, finely chopped onions, tomato and sauté well.
7. Add the ground mixture and fry until raw smell goes.
8. Add little water and cook for a minute, add the roasted capsicums and mix well.
9. Stir until the mixture thickens & cook for 2-3 minutes.
10. Garnish with fresh coriander & grated coconut.
