CHOCO NUT CAKE Recipe | International Desserts Recipe by Shruthi |
| INGREDIENTS | Ingredients :
1/2 cup ( standard measure ) - Maida
1/2 cup - Whole wheat flour
3/4 cup - Refined oil
1/4 cup - Milk
1/2 cup - Curds
1/2 cup - nuts ( I used cashews and pistas)
1/2 cup -Cherries
4- 5 tblspns - coffee decoction
1/4 cup - sugar
1 piece - cinnamon
1 table spoon – baking powder
1/2 table spoon - cooking soda
6-7 tblspns - apple juice
1 table spoon – vanilla essence
1/2 cup - cocoa powder ( not sweetened )
| METHOD | Method :
• Cut the cherries into small pieces and soak them in cup of apple juice and vanilla essence for about an hour.
• Powder ¼ cup sugar along with cinnamon
• Spread a news paper below and sieve baking powder , cooking soda , maida and whole wheat flour. Mix them well.
• Take a bowl convenient to beat , pour the refined oil into it.
In small proportions keep adding the sugar cinnamon powder and mix well with out any knots.
Now again in small quantity add the sieved flour mixture and keep folding the batter. After adding all the flour beat the batter for 3mins to 5 mins .
• To the batter now add the apple and cherries syrup , coco powder , curds , milk and coffee decoction in iterations in a similar manner as the flour was added, folding the batter and then beating it well smooth.
• Rub the nuts with some flour , so that them don’t get sticky and add them to the batter. Beat well for 5mins
• The consistency of the batter should neither be too hard nor liquidy
It must be smooth and with a correct pouring consistency.
Since I used a microwave oven for baking , one must not grease the tray.
• Pour the batter into the tray and place it in the oven
• Set power to 60% of the oven’s power ( if the max power is 900w , set it to 540w)
• Time settings : 8mins
After 8mins check by insert a knife into the cake if its done, if still sticky bake it for another 1 min or 2 accordingly.
For decorations use cherries , nuts , Gems or Sugar icing.
( as per ones choice)
So this was the yummy choco cake with bitter tinge.
Depending on your requirements you could vary the sugar and cocoa proportions. |
