DRUMSTICK BHAAJEE Recipe | Main Course Recipe by Priyadarshani (PJP) |
| INGREDIENTS | 1 Drumstick
1 Potato
1 Brinjal
1 Cup finely grated coconut
2 Onions
5 - 6 Pods of garlic (pounded)
Curry leaves
Mustard and jeera seeds
3 - 4 Red chillies
Red chilli powder
½ teaspoon Turmeric powder
Jeera powder (a pinch)
Salt to taste
Oil | METHOD | 1. Cut onions into thin long strips. Heat a pan and add 4 tablespoons oil.
2. Once hot, add the red chillies whose stem have been slightly slit.
3. Let them darken, then add mustard seeds and very little jeera and curry leaves.
4. Add onions and fry with medium flame till they become transparent. Then add the drumstick and fry for 2 to 3 minutes.
5. Add brinjal and fry for 2 minutes, slow flame. Add potatoes and fry for 3 minute and once the potatoes get slightly cooked, add turmeric powder, desired quantity of chilli powder, salt, pinch of jeera powder, salt and the pounded garlic.
6. Save a tablespoon of grated coconut and add the rest into the cooking vegetables. Mix well and let it cook for a minute or two.
7. Add very little water, just enough to cook the drumsticks, close and simmer for sometime.
8. Stir occassionally. Once cooked, add the rest of the coconut, mix well, keep it on medium flame for a minute and serve.
9. The recipe can be made with a combination of any 2 of the 3 vegetables as well. |
